Costco Rotisserie Chicken

While out shopping at Costco with my parents (the one's with the membership!) I bought a rotisserie chicken for $4.99. I put a few pieces of chicken in my boyfriend's lunch, and there is enough meat for at least 2 more meals. Not only that, but I found a recipe online for making chicken broth out of the carcass (which you can then freeze for later use). So for around $5.00 I was able to get a few meals, which is always nice when you are on a budget.

Cheap and Delicious eats in Spokane Valley

Eating out and living on a budget are two things that don't usually go together so well (and I'm talking sit-down restaurant not the dollar menu at the local fast food chain!), so when I find a place that is delicious, relatively healthy, and cheap, I have to share it with everyone. Such is the case with 3 Sisters Vietnamese restaurant in Spokane Valley (a bit of a drive from CDA, but worth it I assure you). The greatest thing (IMO) is the grilled pork banh mi. And for $2 a pop, they are light on the wallet but not on taste. A banh mi is a sandwich on crusty, slightly warm french bread, with your choice of meat, pickled carrots, jalapenos, cilantro, and a good helping of mayo. If you have a slightly larger budget, the pho (beef noodle soup) here is also wonderful (and around $7 for a good sized serving). Not only is the food here good, but the family that runs the place are super friendly as well. Let's just say that Jenny (our favorite waitress) knows our order when we show up.

Welcome!

After much deliberation I have decided to go back to college and become a full-time student. With the economy as bad as it is, I can't find a job that pays halfway decent (most people in North Idaho work multiple jobs and barely squeak by). And since I have been (for the most part) out of work since June 2010, I qualify for some really great financial aid. I plan on going to community college and will live off of grants and loans.
I've decided to chart my journey, the ups, the downs, and everything in between. Hopefully along the way, I will be able to share some tips for anyone out there that is living the student life.
